Authentic Thai green curry with coconut milk and fresh vegetables!

Ingredients

  • 2 tablespoons green curry paste
  • 400ml coconut milk
  • 300g chicken breast, sliced
  • 1 bell pepper, sliced
  • 1 cup green beans
  • Thai basil leaves
  • 2 tablespoons fish sauce
  • 1 tablespoon palm sugar
  • Jasmine rice for serving

Instructions

  1. Heat oil in a wok over medium heat
  2. Fry curry paste for 1-2 minutes until fragrant
  3. Add half the coconut milk, stir until combined
  4. Add chicken and cook for 5 minutes
  5. Add vegetables and remaining coconut milk
  6. Season with fish sauce and sugar
  7. Simmer for 10 minutes
  8. Stir in Thai basil leaves
  9. Serve over jasmine rice
