Authentic Thai green curry with coconut milk and fresh vegetables!
Ingredients
- 2 tablespoons green curry paste
- 400ml coconut milk
- 300g chicken breast, sliced
- 1 bell pepper, sliced
- 1 cup green beans
- Thai basil leaves
- 2 tablespoons fish sauce
- 1 tablespoon palm sugar
- Jasmine rice for serving
Instructions
- Heat oil in a wok over medium heat
- Fry curry paste for 1-2 minutes until fragrant
- Add half the coconut milk, stir until combined
- Add chicken and cook for 5 minutes
- Add vegetables and remaining coconut milk
- Season with fish sauce and sugar
- Simmer for 10 minutes
- Stir in Thai basil leaves
- Serve over jasmine rice
