Ingredients
- 1 cup quinoa, cooked and cooled
- 1 cucumber, diced
- 2 cups cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1 cup kalamata olives
- 200g feta cheese, crumbled
- Fresh parsley and mint
- Lemon vinaigrette
Instructions
- Cook quinoa according to package directions and let cool
- Combine all vegetables in a large bowl
