Ingredients

  • 1 cucumber, diced
  • 2 cups cherry tomatoes, halved

  • 1 cup kalamata olives
  • 200g feta cheese, crumbled
  • Fresh parsley and mint
  • Lemon vinaigrette

Instructions

  1. Cook quinoa according to package directions and let cool
  2. Combine all vegetables in a large bowl
  3. Add cooked quinoa and toss gently
  4. Drizzle with lemon vinaigrette
